Orange Beach Trip 2009

Well it is officially summer and with the heat scorching what better way to spend a week than at the beach! My family (Mom, Dad, Joey, Aimee, Michael, & Me) all headed down from June 20-26th drove down to the sunny gulf at Orange Beach, AL. This is the first family vacation to the beach in a long time and we all had a blast! We stayed at an adorable 3 bedroom condo right on the beach! Joey and Michael shared the bedroom with two twin beds and Aimee and I shared a double bed in the other bedroom while my parents had an amazing suite bedroom. It had a full kitchen, a large den, and a big patio facing the ocean. It was beautiful! We played board games, Taboo, Battle of the Sexes and watched the movie The Uninvited. We had an Alabama Tent set up on the beach and soaked up a lot of sun. It only rained one afternoon. On the second to last day we had a photo shoot for the family on the beach. For Mother's Day I had ask Faith Photography to do a photo session on the beach of the family for my Mom's gift! On the last day we went on a 14 hour deep sea fishing excursion with two other families that my dad works with. It was a well needed week of R&R!!! Here are some pics!

3 Year Anniversary!

Saturday, June 6, 2009 marks our 3 year anniversary! It has been a lot of ups and downs but the important part is that we made it and we could not be happier. Michael has taught me a lot about myself and how I can be a better person and I feel that I have done the same for him as well. It was a beautiful night, we ate at Macaroni Grill and had a lovely dinner. Then the next day we continued the celebration at our favorite Mexican restaurant, Phil Sandoval's! It was a great weekend filled with a lot of love! We decided not to get each other presents this year and instead save our money for the beach trip with my parents June 20-27th! We are so excited because my whole family will be able to attend including Michael and my brother's girlfriend, Aimee!

Have I mentioned I cannot bowl?

Michael and I last Saturday night went on an old school date, BOWLING! I usually love Michael's exceptional talents that are awesome and random when he is on my team, when he is my opponent, no so much. Bored and wanting to shake up the old dinner and a movie we opted for bowling. It was so much fun, it was glow in the dark, with music videos playing and the giggles flowing! Michael, of course, dominated me at bowling but I still had a blast and highly reccommed you breaking out some of those super awesome shoes sometime in the near future!

Dave Matthews Concert

Saturday, April 25th, Michael and I headed up to Nashville, TN to see The Dave Matthews Band. This was Michael's 11th time to see DMB and my 2nd. It was so much fun! We actually ran into several people we both knew! We arrived in Nashville around 4pm so we decided to eat at Qdoba, one of our favorite restaurants, we always have to stop when we go near one! Then we walked through the Vanderbuilt campus, which neither of us had ever seen. It was beautiful. We then headed over to our seats, kinda in the nosebleed section, and listened to Jason Miraz open and then around 8pm DMB came on! It was awesome, they played a couple of their new songs; which are phenomenal. My favorite new one is Spaceman. All in all it was a great weekend. Michael and I love Nashville, we both really hated to leave!

Poor Bambi

Well, yesterday was the longest, most horrible day ever! Michael bought a car through my company I work for, Sciele, and we had to drive to Hilton Head, SC to pick it up. We drove 8 hours there, waited 30 mins and ate and then drove 8 hours back. My cell phone died during the drive back so we had to stay next to each other through downtown Atlanta, numerous highway changes, and the backwoods drive back to Huntsville, AL. IT WAS HORRIBLE! Traffic was a nightmare and we got separated twice, the worst however was saved for the very end. At around 2 am we were about 15 mins from our apartments when out of nowhere a deer ran out in front of my company car. His head rammed the front of the car and spun his body around too crush both passenger doors. I managed to pull into a Taco Bell parking lot where the nicest cop I have ever met was going through the to-go line. He wrote up the report, called a tow truck and I got into my long overdue bed at 4am. I am posting one of the pics I took in the parking lot, poor Bambi! I am just so grateful that I was able to keep the car on the road because I had ditches on either side of me.

Graduate School!

Well guys, I have decided to take my education to the next level. Tomorrow I officially send out my application for graduate school. I researched a lot of different programs throughout Alabama and being that I want the degree from a distance education program, that eliminated the University of Alabama completely. My main criteria for choosing the school was of course flexibility and cost but also pre-reqs and time to complete the degree. Ultimately, I have chosen Troy University. The staff is by far the most helpful and genuinely kind people and the program is accredited and can be completed (if I push myself) in as little as a year and half but realistically with how much I have to do for my full time job about two to two and half years to finish. I will be getting my MBA! I am very very excited, as are the parents! I start classes August 10th assuming my GMAT score passes me through. I will know for sure my acceptance has been granted by July 1st! I will keep you posted!

Eggs Benedict

Saturday I decided I wanted to eat Eggs Benedict. I am very pleased with the turnout. As we all know, I LOVE to cook, and I especially like trying out new things.

There are several stories about where the orginal Eggs Benedict originated but my persnal favorite is the story of Lemuel Benedict. A retired Wall Street stock broker, claimed that he had wandered into the Waldorf Hotel in 1894 and, hoping to find a cure for his morning hangover, ordered "buttered toast, poached eggs, crisp bacon and a hooker of hollandaise sauce.

Here is a pic of how my first eggs benedict attempt turned out!
